Spanning the years from the 1890s to the 1950s and reaching a peak between the two World Wars, a thriving industry did indeed exist with a total of almost a thousand different canning companies, operating at hundreds of locations, places now known only as unusual names on old maps and in the memories of octogenarians interviewed by the author. Supplementing oral testimony with careful research, R. Lee Burton reconstructs the genesis, growth, and vicissitudes of this once flourishing seasonal industry.
